I used to make these all the time. They are terrific. Vegan chocolate chips are easy to come by; I would use earth balance. These do have a bit of a banana taste but I love the combination of oats, banana and chocolate.

This is from the Food Allergy Mama (she has two cookbooks)- they are so delicious - no one will know they are vegan


THE BEST CHOCOLATE CHIP COOKIE

2/3 c. dairy free shortening

1/2 c. brown sugar

1/2 c. granulated sugar

1 tsp. good quality vanilla extract

1/4 c. unsweetened applesauce

1 3/4 c. all purpose flour

1/2 tsp. baking soda

1/2 tsp. salt

1 c. mini dairy free chocolate chips

Preheat oven to 375 degrees and line a baking sheet with parchment paper. In a mixer fitted with the paddle attachment combine the shortening, brown sugar, granulated sugar, vanilla and applesauce. In a separate medium bowl combine the flour, baking soda and salt with a wire whisk. Add to shortening mixture and combine until creamy. Stir in chocolate chips and drop with a cookie scooper onto prepared baking sheet.

Bake 12-14 minutes or until lightly brown. Cool slightly on baking sheet and serve!

You can either do ground flax seed mixed with water (which adds a texture I'm not find of in cookies) or buy some Ener-G egg replacer. It's a powder you mix with water that acts as a binding agent (like eggs). It's completely vegan and works really well.

We do the same as the above posters (Earth Balance plus Enjoy Life chocolate chips), but sometimes I'll use coconut oil instead the Earth Balance.

I was going to suggest Enjoy Life Chips too. You can find them at Whole Foods.

I would get some Enjoy Life chocolate chips and some Earth Balance buttery sticks and use the Toll House Recipe. I made a vegan version of another recipe and used the Earth Balance instead of butter and it worked fine. I remember growing up that we only had margarine in the house and used that for cc cookies. The cookies turned out the same.

FWIW I was really surprised at how good the Enjoy Life Chocolate chips were and how well they melted.

My brother is visiting us for part of the weekend and bringing his vegan girlfriend. I have dinner that night covered but for dessert I was thinking of making chocolate chip cookies since my brother and kids love them and I don't want to leave her out. I'd like to know if there is a tried and true good recipe out there as there are so many different versions online using apple sauce or icon it oil or what not. have a good one? Thanks!
