Subject: What is your absolute BEST weeknight meal?
My dh loves classic fried chicken and mashed potatoes, or sometimes I'll just stick a beef roast in the crock pot with diced onion, a packet of French onion soup mix, and some water. Cook it on low for 6-8 hours, shred it then put it back into the sauce. It's so good with mashed potatoes, or on rolls.

My meat-and-potatoes DH loves sausages, sauted white beans, and kale chip night. Bonus is it takes all of 30 minutes to throw together, as long as you've got cooked or canned beans ready.

this is a great thread - i wish i had something better to contribute.
probably the fastest meal i can make (that is still somewhat delicious and healthy) is shrimp salad (on greens - not the mayo kind - though that would be pretty fast too)- and if you use premade salad it is even easier. shrimp and rice works too for more starches, but the rice takes longer to cook. my son loves shrimp so this is easy for me.

Pork tenderloin -- put it in a bag with marinade (buy a bottle of something, or Google -- there are tons of different pork marinade recipes, depending on what you like) and let it sit in the fridge while you're at work. When you get home, either grill it, or pan sear it on all sides and finish off in the oven. If you do the latter, you can make a little pan sauce while the meat rests to dunk your bread or pour over your starch.

That's probably true in our house too
The ones that come to mind for me aren't really meat and potatoes. Although now that it's summer, we'll sometimes grill steaks and vegetables.

My go-to meals are cassoulets. Here are my two favorites:
-sauteed lamb, can of rinsed and drained chickpeas, diced onion, can of diced tomatoes, bag of spinach. Cook for about 10 minutes. Stir in nonfat greek yogurt before serving. Sprinkle with zatar if you have it.
-browned spicy chicken sausage, can of rinsed and drained cannellini beans, can of diced tomatoes, diced onion, chopped mushrooms, minced garlic. Cook for about 10 minutes. Stir in pecorino romano before serving.
If the beans aren't starchy enough, serve #1 with pita bread and #2 with french/italian bread.

I'm in a slump with blah weeknight meals that no matter how long I slave over them, seem to come out blah.
I'm willing to spend a decent amount of time cooking on a weeknight if the result will be delicious, but don't want to commit to 3 hours of a beef burgundy...
My husband is a Midwestern meat and potatoes guy, so I need to have a meat and a starch...
Help before I throw my stainless steel spatula out the window!
