soups and stews are great. Here's a couple of quick ones:
Red lentil soup--saute onions with cumin, add about a cup of dry red lentils, a couple of diced tomatoes, enough water 2 cups or so, and a veg bouillon cube.
Coconut soup--saute onion, add one can of chick peas, white or sweet potatoe (2) diced, sliced cooking greens, a can of coconut milk (spices salt, turmeric, cumin, corrindor, cayenne)
Another idea--beans or tofu (protein), rice/potatoe/quinoa/noodles, veggies (sauteed greens or roasted broccoli)
I probably have some misspellings in there.
I understand the slump. Another reason I enjoy checking out recipe books from the library. I use them to get ideas and then make my own version.
