Two weeks should be fine for the half gallons of organic milk that Costco offers, presuming you won't have one open for the whole period. Just make sure you mark the one you're using OPEN.

Some produce will last two weeks if it is refrigerated. Potatoes, apples, carrots, brussels sprouts, sometimes peppers and kiwi (if you buy it hard). Other things, like tomatoes, berries, grapes, green beans, pineapple, bananas, etc. won't make it two weeks. Milk depends on how far out the date is when you buy, and when you open it. Ultrapasteurized milk could conceivably last two weeks. Eggs will be fine, as will cheese, yogurt (depending on the date), and anything frozen.

We end up at Costco every week because we love their rotisserie chickens. Otherwise I think every other week would work great.

We still shop every week - but I've read that fresh veggies after a few days aren't any more nutrious than frozen. So we start the week with fresh veggies and end the week eating frozen. That also gives me the flexibility that if plans change and we don't eat what we intended, the frozen veggies can wait until the next week to be eaten.

2 weeks is a little long for milk - it'll work some weeks and not others. Eggs will be fine for that long.

The ONLY thing I ever buy at the grocery store now is coffee. I like flavored. That's it. I buy my eggs, milk, etc. at Costco.

I do exactly as you are doing and rarely have to go to the grocery store in between my bi-weekly shopping trips. The big downfall of Costco is that if you love cooking and need special ingredients, such as fresh spices and uncommon produce, you have to go to other stores. Also, you have to be able to store all of the food you buy. I find my system to be a huge time and money saver, but then, I don't love to cook so I don't miss all of the stuff the grocery store offers.

Help. . .my old system (shopping every week using Peapod) is falling apart. I don't have the time to plan meals and shop every week, even online. I'd like to try shopping twice a month at Costco to stock up and filling in the gaps at Giant or WF as necessary. What to buy? I figure I can stock up on meat, milk, bread, cheese, OJ, breakfast sausage, and other staples that get eaten like crazy, but is there anything else I'm missing? Everyone raves about the produce but will it last two weeks?
