The low fat versions are generally higher in carbs/ sugars.

Frankly most of the suggestions are pretty sugary & carby for a diabetic.

Eggs of some kind & a salad would be my suggestion.

Yes, this. Get some low fat Greek vanilla yogurt, some low fat granola, and some berries or already cut up berries and fruit if you can (whole foods or balduccis have the fancier cut fruits). Pick up some nice clear plastic cups as well. Have everyone layer their own parfaits.

Smoked salmon is also nice. Instead of traditional bagles and cream cheese (highly caloric) do fancy crackers and whipped light cream cheese. Add some sliced red onion and capers to make it a complete dish.

Throw in some mixed greens with cherry tomatoes, red onion, and a simple vinaigrette.

I'd go for some "luxury" fruit. A fruit salad with high quality more expensive fruits like raspberries and fresh pineapple is about as healthy as you can get. Even just a bowl of fresh berries without any other fruits.

OP,

You could always bring egg beaters with you and whip up some scrambled eggs. (I know not ideal.)

It's nice of you to do this for your MIL. Happy Mothers Day to you as well.

If you don't come across better options, you could pick up some nice fruit, fat free Greek yogurt, whole wheat bagels and some decent light cream cheese. Canadian bacon if you want meat- or a little good smoked salmon and accompaniments wouldn't be the worst thing. Pre- made quiche might be hard to find. You can buy a can of lower fat cinnamon rolls- super easy to make and might seem festive. Just limit yourselves to one and bake at her house for best results (you only need 1 round cake pan and could do disposable). Coffee and fat free half and half. Have a great brunch!

My mother in law has had a slew of health problems including diabetes and wants a healthy brunch. We cannot go out so DH and I agreed to bring brunch to her place. So where can I get a few healthy items? Is there a eggwhite quiche I can get? Or healthy muffins/ rolls? I am not much of a cook plus I have two baby twins and would much rather but the items.
