or OP try a recipe finder site where you key in your ingredients on hand and it gives you recipes..

OP here. I wish I had more stuff at home! I have spinach, mushrooms, broccoli, tomatoes, avocado, frozen peas, and pantry staples. If I had peppers, I'd do that in a minute. Don't feel like shopping though.

I second stuffed peppers. Try eastern European meatballs. Sirloin, onions, fresh dill, maybe and egg and some breadcrumbs (not sure--I just had these at someone's house and they were delish). Grated, boiled beets--could mix with a bit of horseradish for heat. Rice or potatoes.

Shepard's Pie (I recently made one from a Martha Steward recipe I got online)
I also do an easy weeknight dish of browning ground meat and making baked potatoes topped with ground beef, onions, tomatoes, cheese (really whatever you feel like).

Here's one recipe, but you can find plenty others.
Use it to make some really good homemade tomato sauce. Then use that for pasta or lasagna. Freeze any sauce you don't use.

thanks! the sloppy joes sound really good, wish i had feta. the saltiness would really set it off.
the samosas especially sound good. i don't have any phyllo dough, so maybe i could just serve the meat mixture over rice with a veggie on the side...like sauteed spinach with chili pepper.

Mediterranean sloppy joes:
1 tablespoon oil
3/4 to 1 lb ground beef
14.5 oz can diced tomatoes
1 onion, chopped
3 garlic cloves, minced
1 tsp oregano
3/4 tsp salt
1/2 tsp cinnamon
1/4 tsp pepper
1/8 to 1/4 tsp red pepper flakes (optional)
3 tablespoons tomato paste (more to taste)
4 tablespoons feta
1. Heat oil, cook onion and garlic on medium heat for 3-5 minutes
2. Add beef and cook through. Drain if necessary
3. Add tomatoes, tomato paste, spices, bring to a boil and simmer for 10 minutes until thickened
4. Serve on buns, or (preferably) over orzo. Top with crumbled feta
I have a package of ground sirloin I need to use, and I don't want to make burgers, tacos/enchiladas, pasta, or meatloaf. Don't mind a little work but preferably want to keep it to around an hour, all in.
Suggestions? Getting bored with the above-mentioned dishes...
