I often make a central entree and then pair it with both low and high calorie sides. For example a rotisserie or baked chicken and then have corn and mashed potatoes and dinner rolls for those who need to gain weight and steamed broccoli, mashed cauliflower and whole wheat pita wedges with a little hummus for those trying to lose weight.

I've also made a stir fry cooking the meat separately. You can use boneless skinless chicken sauteed for those want to lose weight. Then you can do a batter dipped chicken pan fried for those trying to gain weight. Serve with brown and white rice. The ones trying to gain weight can have white rice in larger portions and those trying to lose weight can have brown rice in smaller portions.

You get the general idea. You can do a number of meals this way. It's more work, but I've done it when I've had two groups with different dietary restrictions like the time my mother-in-law and my parents all came to visit at the same time. My father and mother-in-law have different almost opposite dietary restrictions. I had to be creative to make meals that weren't two completely different meals that I was cooking simultaneously.

What about something like a taco bar with toppings. The ones looking to eat light can just add the meat and veggies, and the ones needing more calories can add cheese, sour cream, etc. Can do the same with baked potato toppings.

I would cook what you would normally cook for them and keep your portion sizes smaller and supplement with lots of vegetable/fruit sides.

College kids will be home soon. DH, DD1 and I are trying to keep things light. DS 1 and 2 are always looking for calories because of their regular gym workouts (they're pretty muscular). I'm trying to come up with a few meals that can keep everyone happy. Any suggestions appreciated!
