Honestly, I would do the enchilada casserole--green chiles are really mild and you can just use a little less cheese.

Maybe make something and buy an inexpensive crockpot and put the stuff it and offer to do it once a week. We did that for a neighbor with breast cancer. Each neighbor took a day. We also provided a salad each day.

we do salad w/dressing on the side, roast chicken, roast potatoes and carrots.
Usually do a fruit salad and choc. chip cookies for desert.
Chocolate should be avoided so the cookies can be for the family. Do the fruit salad without any citrus.
Bringing a breast feeding mom anything spicy, with tomato sauce or a vegetable like brocolli or cauliflower is not really great because it does affect the breast milk and then the baby.

I've made meals for 4 families in our multiples club. I usually give the families a choice of several meals. All 4 have chosen the following:
meatloaf, mashed potatoes, gravy, salad, bread. I added frozen microwaved corn for the family with a 3 year old older brother since I figured he wouldn't want the salad.

Soup and some yummy bread product. Very easy to heat, easy, etc. Maybe a salad too. Also, don't forget something for dessert.

I just had my second baby, and I got four lasagnes! Yes, they were all tasty, and I greatly appreciated them, but that is a lot of pasta. So, my two cents is don't bring lasagne!. All of the above things sound yummy!

I did this for a friend recently and took them mildly spiced Indian food - potatoes & peas in a yogurt-based curry, cumin-spiced roasted cauliflower, and rice. They said it was really helpful because you can just fill a plate with exactly as much as you want and heat it in the microwave.

a friend just had her second baby and I thought I would bring over a meal for their family. Something easy to heat up.
Any suggestions on what I should bring? I was thinking chicken enchilada casserole but I know she is breastfeeding and there is a lot of cheese and green chilies.
