Our oven has convection capability, but you need to convert the time for things like a roast, so I don't use it b/c I don't want to get it wrong.

Convection oven cooks faster, but it takes longer to preheat. Not sure if it's necessarily time saving.

Love our convection. It circulates air for more even cooking. Great for baking.

I've seen ovens with gas range tops and convection ovens? Are these any good? What is the difference besides they cook faster? Are they more drying? Can you broil in them?
