there is an earlier post about a weekly meal plan, you could just remove the meats that folks are posting and beef up the iron intake with leafy green veggies or beans
If your family is veg and you do weekly meal plans, can you tell me how you go about planning your week of dinners? I have two young children, so fast and easy for kids to self-feed would be appreciated. I would say that I'm a fairly experienced home cook/baker, but new to vegetarianism. DW is borderline anemic, so anything that is both veg and high in iron would be great.
