I'm not sure I would double the recipe if you're going to cook it in a pan and finish under the broiler (unless you use two pans), but if you're going to bake it in the oven (maybe not a true frittata but still delicious), doubling should be fine.

Double the recipe. Frittatas are easily adjusted.

Anyone have a recipe that's good for 4 people? There was a recipe in the Food section of the Washington Post on Wednesday but it's not big enough for a group and I'm not sure if you can just double the ingredients without affecting taste.

I do see several recipes if I Google ham and asparagus frittata, but I'd like some suggestions about a good recipe to use.
