i would do something creamy and mild-maybe a cream cheese or even marscapone, something in that vein

Have you folks never had crab dip, a delectable concoction with cheese. Yes, crab and cheese pair well. I've had crab quiche, and it was delicious.

I agree, I wouldn't do it.

I suppose just a touch of Swiss, mozzerella, or fontina wouldn't kill it. But it would be better without.
