Too much cheese is bad for you cholesterol and animal fat (as opposed to vegetable based fat like avocados) Hard cheeses are better than soft ones. They also pack more flavor into a smaller amount. You need a lot of Colby and cheddar to make something taste cheesy when just a little Parmesan is enough. Talking only about taste not the cheesy consistency of course. I love cheese but have cut back as I noticed of I have it at home I crave cheese and toast and put it on eggs and everything else.
