14:27 followup: if you're bothered by the smell of garlic on your hands afterward, squeeze lemon on to your hands. Cuts it quite nicely.

Kale salad is fantastic.

Wash well, remove stems/spines, shred leaves with your hands. Add a bunch of olive oil and chopped garlic to the kale in a large bowl, massage oil/garlic VERY WELL into leaves with your hands. This softens and flavors the leaves without any cooking.Then let it sit for at least an hour for best results. You may want to add kosher salt (sometimes I do, sometimes I don't). We usually top with chopped walnuts or pecans and dried cranberries. Even my kids love it.

Kale Chips are to die for (recipe above where you roast in the oven). Do it with curly kale and NOT frozen. That won't work.

We love kale around here and another great way to eat it is just sauteed with some S&P, onions, garlic, evoo, pinch of red pepper flakes, and a splash of vinegar.

I buy frozen kale and add handfuls to scrambled eggs, soup, pasta sauce, curry. you can sautee it with a tiny bit of onion, raisin, and pine nuts. finish with salt and pepper and a squeeze of lemon or sherry vinegar.

I saute it with onion and add crispy bacon. I put the left overs in a frittata.

Make sure to cut it in small pieces and saute well, squeezing out excess liquid. It's tougher than spinach and sometimes can be a little bitter.

I make kale pie with spring onions and feta in phyllo dough. Similar to spanakopita.

If you are making penne or similar, drop some chopped kale into the cooking water.

Drain the whole thing, add toasted pine nuts, grated parmesan, olive oil and a bit of lemon juice.

I love Anna Thomas's cookbook Love Soup. Maybe take it out of the library. She's changed our lives with her various "green soup" recipes. Kale, chard, carmelized onions. My kids, who otherwise don't like kale or chard, eat bowl after bowl.

Have you tried roasting kale? Just toss with a tiny bit of olive oil, salt and pepper, thinly sliced garlic. Roast for 5-10 minutes at 375-400. Eat it like that or toss with some sesame seeds or mild vinegar. Also good with roasted potatoes.
