Anything from Pioneer Woman - I find her recipes to be very accessible without a lot of "fancy" ingredients.

The Betty Crocker cookbook My dh even uses it for beer batter and stuff...

Ten Dollar Dinners. Everything I've made from that book has been great.

Not a cookbook, but I have a subscription to America's Test Kitchen and use it all the time!

Another vote for Bittman. How to Cook Everything or a simpler one is The Minimalist Cooks at Home. Or maybe an online subscription to Cook's Illustrated, though not all are going to be no-fuss.

I got it as a wedding gift, and it really has everything I need to know for basic cooking.

That book just falls apart easily IMHO. You can get it as an app too.
