Shrimp scampi. Boil salted water for pasta; put a saute pan on. Heat olive oil, white wine, lots of pre-minced garlic, red pepper flakes to taste (we like spicy), salt and pepper in the saute pan. Add shrimp (pre-shelled) when you put the noodles in. Quick saute, then add a few tablespoons of butter and lots of fresh flat-leaf parsley. Drain the noodles, put back in pan, add shrimp and sauce, stir.
Start to finish: 10-15 minutes depending on how fast your stove will boil water. Good enough to serve to company if you don't have time to cook something really fancy.
I serve with some kind of veggie I can steam in the microwave and French bread to sop up the sauce.

Pasta with fried eggs (Mark Bittman) - quick and easy pasta with the eggs as a sauce, basically. Yummy and fast.

All our dinners are quick-n-easy.
Chicken parm w/ pasta & salad (hint: we buy the pre-breaded chicken from Trader Joe's) is what we're having tonight. The chicken has 5 more minutes before I add the sauce & cheese, then I'll start the water boiling for the pasta while I pull together a salad.

Roasted potatoes with a variety of toppings - kind of like a baked potato bar
Vegetable fajitas can be thrown together in no time
We put vegetarian chikn starters in rice a roni for a not-so-healthy but delicious and quick meal

Browned butter sage chicken over gnocchi. I add whatever veggies we have on hand and spinach.
Brown the butter with the sage. Put the chicken in for 3-4 minutes a side (I normally cut mine after this and if there's pink at the thicker end of the breast I throw it back in the pan).
