Of course you'd need to use rice noodles to make it gluten free. And yes, rice is also gluten free.

Do salmon - it's easy to make 6 servings on 1 tray in the oven in 25+ minutes on 400 degrees. I season mine with dijon mustard and lots of dill sprinkled on it.

Make sides of:
- rice (for everyone not gluten free) - you can make this the night before.
- a veggie side, like sauteed whole green beens in garlic and olive oil. you can make this the nite before.
- and do a salad - I make my own dressing with olive oil, red wine vinegar, and a few spoons of dijon mustard mized together.

Sliced brisket/pot roast? I cook a brisket for 3 hours, then take it out of the oven, slice it thin, and then return to the oven to cook until tender. You can cook it the first time the day before so the next day it just needs a couple of hours in the oven. That will make a full pan -- enough to feed 6 adults. Serve with potatoes and a salad.

I personally don't like stir fries with company bc I am in front of the stove for too long and it is easy to get distracted and overcook stuff.

I made a really delicious lasagna once that used layers of polenta instead of pasta noodles. it was a big hit for my friend who really missed the flavors of Italian food. I'm sure you could sort of wing it or find a recipe somewhere online, and it would be easy to make ahead. The dessert was this fantastic icecream bombe from one of the Barefoot Contessa cookbooks. It's a dome of icecream and sorbet that is made of three layers - mango sorbet on the outside, raspberry in the middle, and strawberry icecream at the core. we treated it just like a birthday cake with candles and everything! and it was easy!

But you could also just do steak or fish, mashed potatoes, and a vegetable. No gluten there.

Stir fry is a crowd pleaser and not that hard. If you don't want to chop your vegetables in advance (and I wouldn't), put your guests to work chopping. Group fun and takes just a few minutes.

Asian works great. You could do a stir fry or curry. I have two friends with Celiacs and we eat out regularly - mostly at Asian/Indian restaurants as those are the easiest places for them to get gluten free. Just watch the sauces.

If you do this, make sure you use Tamari intsead of regular soy sauce which has gluten

I am an avid cook - and entertain ALL the time.
But one of our guests is gluten free - so am looking for a great meal to cook.
Would prefer not to be in the kitchen all night. And don't want it to be crazy expensive.
Any great ideas?
