There is nothing about a navy bean that turns pink. And navy bean soup is typically made with ham or ham bone.

The only thing I can think of is, if you put a tomato in a soup/stew and cook it till it disintegrates, the remaining pieces can be kind of pink and stringy. Not really sure what tomato would be doing in navy bean soup, though.

Maybe it was bits of red bell pepper? Or more likely they lied to you.

Somtimes the skins will come off the beans, and if they used carrots or other dark veggies in the broth then the skins could pick up some of the color.

I suppose it could have been fake meat - navy beans wouldn't have a hammy texture.

It usually has ham, yes? Sounds like the server fibbed to you. I looked at several vegan/veg recipes and didn't see ingredients that would be pink.

I was at a restaurant for lunch today and was told that the Navy Bean soup was Vegan/Vegetarian...when I got the soup, I noticed tiny slivers of pinkish "meat" floating around...I questioned the staff and they absolutely insisted that the soup had no meat. I was inclined to believe them, but the pink "meat" looked like bits of pork or chicken. The only other explaination could be that this pink "meat" was actually part of the bean. Anyone know if navy beans split when cooking to produce this pink meaty thing?
