So far this week I've made

Tortilla soup with chicken (this turned out really well and was a nice mix of comforting, spicy, and sour)
Red lentil (a very plain base with sauteed chopped onion, garlic, ginger, and hot peppers stirred in at the end)
Chicken noodle in the crockpot

I also like barley soups. I noticed at Whole Foods that they now sell pho base in those shelf stable boxes. I know it wouldn't be as good as really pho, but I'm intrigued, could be a good quick dinner.

I make about 1 a weekend and don't use it as a meal but as a snack all week instead of something fattening.

barley is my new favorite grain for soups. So delicious. Mushroom barley with or without beef.

vegetable soup.
V8 juice
frozen veggies
pre-cooked beef tips
cut up potatoes

cook/simmer, stirring as needed, until vegetables are thawed out and potatoes are cooked.

OP could you share your black been recipe? I've been looking for a good veggie black bean soup.

Lentil soup is great and inexpensive. I am making Icelandic soup/stew today. Had it when I was in Iceland last year and loved it. Also love tortilla soup. Here's a recipe for you. It's really easy and really good. I only use 1/4 teaspoon cayenne and usually use 2 quarts of chicken stock. My college age daughter always asks for it when she comes home.

and your basic chicken noodle using leftover rotisserie chicken.

also love corn chowder w/ bacon and red potatoes. i usually make it with frozen corn.

and a very garlicky creamy portobello soup. also w/ bacon and leeks but as a garnish.

I always keep chicken broth in the freezer.

This am I made a cup of faux egg drop soup. Heated up a cup of broth, added some tamari and lime juice and a little sauce. Brought to a boil. Took off heat, stirred in 2 eggs and slurped it up. I didn't have any ginger but that would be a great addition too.

Cream of broccoli. Melt a half stick of butter, sauté a chopped onion for about five minutes, add a quarter cup flour and stir for a minute or so, add 4cups veggie or chicken stock, bring to a boil. Add chopped broccoli stems from a head of broccoli and cook for about five minutes add broccoli florets and return to boil. Simmer for 20-30 minutes then put in a food processor. If you want a more "finished" soup, put it through a fine sieve and reheat. Otherwise you're good to go.

Butternut squash! I just simmer in chicken broth with onion, some herbs, then puree. Add some cream or milk at the end.

Also like red lentil soup (the orangey looking lentils) with lemon. Those cook super fast so will be done within half an hour.

I just made chicken noodle with the remains of a whole chicken I'd cooked in the crock pot. I saved the juices in the refrigerator for a couple of days. Used the fat to saute the vegetables (onion, carrot, celery) and some of the liquids mixed with water for the "stock." Added the shredded chicken, thyme, frozen peas and noodles. Soooo yummy and so much chicken flavor.

Yesterday I made a yummy black bean soup and I'm in the mood for another soup today. I was thinking potato.
