Brown sausage and remove from pan. Sauté an onion in the same pan. Add rice and cook in chicken broth. When rice is done, add spinach, dried cranberries, and sliced sausage. Done.

I would saute bell peppers and onions, then add the sausage and serve it over the rice.

Sweet Italian sausage links--I was hoping to grill out this past week but that didn't work out.

What kind of sausage?

I'd say fresh spinach, at the last minute, so it just wilts.

Or, you could do a modified red beans and rice, but I'm not really a fan, myself...

What would you add to make a one skillet meal?
