I don't think you need a spinach salad. If I were one of your guests, I probably would only eat it out of courtesy - not really into salad with my breakfast.

Thanks everyone! Great suggestions. I'm going to go with the French toast casserole, the quiche, assorted croissants and rolls and fruit! And some bacon . Do I need a spinach salad in there too, or will that be enough?

Brunch is an awesome meal to host for those of us who aren't gourmet cooks. Google recipes for baked challah french toast; frittatas. Bake or buy muffins. Bagels and cream cheese can be picked up. Get or make a fruit salad.
The last, we found while we were in Dutch PA and we loved it. The little PA Dutch restaurant that we went to for brunch a few times had a different flavor every day:

Our friends have always hosted us for various dinners and get togethers and I wanted to repay the favor but everyone can only get together for brunch. I'm not a brunch baker/ cooker per say-just make quiche here and there. I was thinking some fruit, mimosas, rolls and maybe two quiches. got any good recipes? Or for something even easier? like a breakfast casserole or strata that I can make the night before? What are some successful brunch menus you have used? Recipes? Thanks!
