OP back. I browned a pound of ground beef (I know, I know, I shoulda used lamb), added some peas, heated the gravy (which has carrots, celery, mushrooms, and onions in it), mixed it all up, put it in a casserole topped with mashed red skin potatoes, dotted with butter and sprinkled with parmasean and it's now in the oven, ready to eat at 6:30. Oh, and I picked up a fresh baguette for the side. Can't wait! Thanks for the ideas.

I highly recommend the Barefoot Contessa company pot roast and we use extra sauce as Ina recommended for pasta.

I used the Italian Pot Roast recipe in the Joy of Cooking. I can't search to see if it's online right now, but that's the one I used. Delicious!

Freeze it for the next time you have leftover beef of any kind, then make a shepherd's pie. Fry some carrots and onions (and celery if you're into that kind of thing), add your leftover beef (shredded or chopped), your pot roast gravy and some peas, top with mashed potatoes and bake.

I would freeze it in smaller packages & use as a base for quick meals, soups.

Use it as a base for soups or stews. Cook rice with it.

You can freeze it, preferably in smaller chunks.

We had amazing pot roast yesterday and have finished the meat but there's still LOTS of gravy and veggies left. Other than throwing it over egg noodles, is there something I can do with this delicious gravy?
