Brine a pork loin and roast with herbs and olive oil (when he's being less rigid with the low carb, honey and thyme is a gret mix)
Roast salmon and serve with a dill sauce and green beans. Fennel olive salad is a nice change up.
Sauteed shrimp, red pepper, snow peas, with garlic, ginger, soy sauce, and olive oil. (Add crushed peanuts for some extra interest.)
Mash cauliflower with some butter and parm.
