I love South Beach and have been eating this way for years now.

I have two of their cookbooks. The South Beach Quick and Easy (yellow) and an Orange one. Every recipe in those are terrific. There is one I use almost weekly (Baked Pesto Chicken) and I only ever make their Caesar Salad. They also have a very good eggplant and ricotta pasta dish.

I'm thinking ahead to Jan. 2. I am not overweight but not at my happy weight. Too many sweets and a bit too much wine and the five days I'm about to spend with my inlaws on top of fertility treatments have all contributed and I want to spend a month getting the snacking and bad choices tamed. (I also will be giving up running and biking after keeping up with a pretty intense routine during my last cycle of trying to conceive and worrying that might have hurt my chances.) Last year we did a month of South Beach and both my DH and I saw results super quickly. It was hard on my body with running but since I won't be this year, I think it's a good way to restart (it also helps us get in the habit of menu planning, shopping, and lunch bringing.)

SO ... any good recipes for lean meat and vegetable dishes? I love to cook and don't mind more complicated work if it means better flavors.
