Hmm...we do flank steak but that won't work for you. Maybe a fancy type of pasta? Or chicken stuffed with cheese/spinach/etc. Do they eat seafood? If so, I would probably do salmon!

For Christmas Eve - salmon, always.
For Christmas day -- we usually do a smorgasbord -- lots of cold dishes (meatballs, cabbage, potatoes, shrimp, etc.)
You could do a big soup or stew (Italian wedding soup, vegetarian chili, etc.) with fresh baked bread.

This year we ordered a Tur-duck-hen from Cajun Grocer. Hoping it's good. It's our first time trying it. Not sure what we're having with it yet. We've done the Italian dinner - spaghetti/meatballs once before and was just fine.

Last year we did ham, mashed potatoes, baked yams & apples, corn muffins, salad, and baked butternut squash. It was very carb-heavy & starchy, and we loved it.

I'm having my inlays over for Christmas dinner and looking for something everyone will enjoy - these folks aren't red meat eaters and not traditionalists about goose, ham, etc.
