I'm planning to do a Christmas Eve taco bar. Pulled pork (chicken or beef would be good too if you don't want more pork), Mexican rice, beans, and an assortment of toppings. Makes a nice change from the traditional holiday food we'll be having the day after.

+1. No such thing.

Ham the night before (on a plate, with sides); ham the next morning or lunch (on fresh baked biscuits).

though the enchilada thing sounded pretty good too.

Roasted turkey?

For your parents--Mashed sweet potatoes are quick. Throw together a green salad.

We had a "Feliz Navidad" meal last year. Enchilladas with green & red sauce, rice, beans, etc. It was wonderful and tasted even better the next day.
