OP, just so you know, I used carrot cake mix once and baked them in mini muffin tins. Worked out fine.

OP here. Thanks, 19:51. That is indeed what I meant. I was just afraid if I cooked it in loaf pans it would come out too soft. I used disposable holiday pans, but took the advice about reducing the temp and making sure the center was done. So far they look good, but I haven't tried cutting them. Thanks for your help, 15:14!

14:10. OP meant quick bread (sweet. Like muffins.) I was confused by the thread title at first- too.

you just want the cake in a loaf form right? What type of loaf form do you have glass, metal? Just bake it like banana bread or pound cake, maybe reduce the temp from 350 to 335, bake for 45-55 min., make sure the center is cooked. Also, line the bottom of pan with parchment paper or coat with a 1 to 4 mix of flour to melted butter.

Well, first find a way to separate the flour from the sugar. Good luck with that.

I have a box of Betty Crocker Spice cake mix, but I really want to make bread. What do I need to add or change to bake it in loaf pans and have it come out like bread? Thanks!
