I telework, and sometimes I will make an omelet, salad, or eat leftovers. I will admit to subsisting off nuts and yogurt, if we have nothing in the house.

Today, I made an omelet using feta, leftover roasted chicken, and spinach.

One thing we do is wash and store our greens in ziplocs witha paper towel so that they'll last longer. Makes for faster cooking as well.

I cook a pot of quinoa about twice a week and use that for lunches. With it, I add thawed frozen spinach, feta cheese, avocado, olive oil, and balsamic. I eat it warm. Sometimes, if I'm really hungry, I'll add an egg on top.

dinner leftovers almost exclusively. I HATE days when I have to make lunch so we plan dinners with leftovers in mind. otherwise I'll do crap like eat half a bag of chocolate chips for lunch.

11:26 here -- obviously I like more substantial lunches than you, because I could never get by all day on just a piece of bread.

Other options -- keep an avocado and grape tomatoes around. Put them in a bowl with s/p/olive oil. Eat along with a piece of bread.

As you can see, I like to take the opportunity to load up on vegetables for lunch since our dinners tend to be more protein focused.

I WAH. My lunches vary, but tend to be similar for any given week. Here are some of my favorites:

This week, I diced and roasted a squash, and made a homemade dressing. I did all of this on Monday and have been eating it all week along with a tuna salad sandwich. TJ's veggie burger on a multi-grain slim. Side can be soup, chips, avocado, or side salad. One week I made a kale salad and ate that with a veggie burger all week.

I will roast a chicken on Sundays, then use the leftovers for chicken salad. Get all ingredients ready and chopped on Monday, then it's easy to throw together each day. It can be anything, but one of my favorites is: lettuce, chicken, feta, pistachios, grape tomato, TJ's champagne dressing.

Sometimes a simple deli sandwich and soup.

Leftovers! DH almost never eats leftovers so I have free reign over those for my lunches.

You could take any of the above and simplify -- for example, roast a squash and just eat that plain (or with s/p, olive oil, whatever you like) along with a simple deli sandwich.

I work at home 4 days/week and need quick options.

Lots of salads, with some combo of the following: Olivia's spinach/lettuce blend, tomato, olives, artichoke hearts, hearts of palm, cucumber, celery, avocado, basil, parsley, sunflower seeds, nuts, and leftover protein from dinner. Or I cook up a couple chicken breasts and use that throughout the week. Canned tuna or salmon works too. I make a simple dressing with olive oil, mustard, balsamic vinegar, lemon juice, salt and pepper.

Sandwiches with good bread, deli meat, sliced provolone, avocado, tomato, mayonnaise & mustard. I make a lot of soups or beans and rice and have those for dinner a couple times and lunch for me 2 -3 times. Raw carrots, celery, broccoli, and fruit.

I WAH and eat leftovers or tomato soup with crackers. Or cheese and fruit. Sometime between 10 a.m. and 2 p.m. I do NOT cook lunch unless it involves a microwave.

Repurpose dinner leftovers usually in the form of protein on top of my salad or in a sandwich. Chicken chopped up and tossed with some mayo with a pita. I do Cubanos as well with leftover pork loin or pork roast and ham. I love to make soups so that can also last for awhile. The carcass of the rotisserie chicken goes in a crock pot to make stock then later make quick homemade chicken noodle soup. Leftover fish on butter lettuce tossed with a quick homemade lemon tarragon vinaigrette (from epicurious).

Op, I'm so with u... I make great breakfasts and dinners, but my lunches always suck. Half the time it from the grocery store salad bar!

Any deli sandwich, so nice to not be in such a rush that I can put fresh lettuce and tomato on it

Homemade Cubano (shortcut-basically just a smashed toasted ham, Swiss, mustard, pickle sandwich on good bread) have to get the pan hot enough to melt the cheese though

Any SAHMs there who are by themselves more or less every day at lunch? Or people working from home?
I am a SAHM and feel I do enough cooking. I love salads and healthy stuff but I am not very creative. Anybody want to share what they eat when they are alone, if they are proud of it?
Sometimes I even forget to eat and then before running to the bus stop I am hungry and just grab some bread or something .... Really bad.
Looked at the Trader Joe's posting below. Very tempting! But am looking for easy home made stuff.
