The Labuvitch cook book has a great and easy brisket recipe. No Lipton soup but ketchup. If I have time later, I'll look it up and post it for you.

Latkes with applesauce. If you have to mix it up, put some shredded carrot in some of the latkes. Or shredded zucchini.

I can make a good brisket. I can buy a perfectly fine doughnut. GIMME LATKES.

When I used to do Hanukkah parties as a dinner thing, I either would serve chicken soup with matzah balls along with the latkes, or one year, I made tzimmes, which was easy and delicious, but admittedly very heavy to go along with the latkes. Nevertheless, it was a big hit. Sufganiyot for dessert of course.

Since the party is presumably in the evening (when you can light the menorah), I think you need to have more than latkes, even though I, too, could gorge on them all night I'd make brisket or roasted chicken and serve it buffet style, along with some salads and the latkes. I'd also put out simple app's like crudite and hummus and chips for when guests arrive. Definitely donuts and something chocolate for dessert!
