If that's 3/4 lb. starting weight, and then you're going to whip it up, and add a bunch of milk and butter, that'll increase the volume and you can get 4 servings out of it.

But probably just barely, with no leftovers. I'd double it.

I always overestimate- but if the red potatoes are the size of a baseball, I figure 2 per person. Of course that ends up being too much, but I'd rather have leftovers. I never go by lbs- I have to look at the potatoes themselves and estimate how much I'd eat and then multiply that by the number of people I am cooking for, plus extra....

The recipe I have, for red skinned garlic mashed potatoes, says 3/4 lb is 4 servings. So I got 4 lbs - but does not look like that much.
