Mine does this (slightly annoying) auto adjust. If I put on 425 convection it will switch to 405 (or something like that).

I find it really speeds up some things (e.g., roast chicken) and isn't at all that different for others (e.g., roast brussel sprouts).

Read the manual that comes with it, usually it will have some good information on modifying cooking times.

You'll have to use trial and error to find the right timing on your oven, but generally convections cook faster so reduce time by 5-10 minutes for short durations, and maybe 15 minutes for anything longer than 30 minutes. You can always add time - but can't subtract if it gets overcooked!

I find that things tend to brown a lot faster in the convection, so if you're going to cook a turkey, be sure to tent him with foil until the last 20-30 minutes or so, or he will get too brown in a hurry!

Hi ladies and gents. If you have a convection oven how does it differ when baking cookies, meats, breads in it vs. a regular electric oven? I am getting a one-fan electric convection oven next week and need to figure out how to adjust the baking times. Thanks.
