You'll have to use trial and error to find the right timing on your oven, but generally convections cook faster so reduce time by 5-10 minutes for short durations, and maybe 15 minutes for anything longer than 30 minutes. You can always add time - but can't subtract if it gets overcooked!
I find that things tend to brown a lot faster in the convection, so if you're going to cook a turkey, be sure to tent him with foil until the last 20-30 minutes or so, or he will get too brown in a hurry!
