I don't want to be a d-bag, but muffins from scratch are really not very hard.

This recipe took me 10 minutes and is crazy yummy:

I don't think even a good mix really competes with scratch.

Last night I made pumpkin mini-muffins using the Pillsbury mix for a kids Halloween party this morning. They were very popular and I even had one mother tell me her kids preferred mine to the other pumpkin muffins (there were two other batches, one homemade and one store-bought) on the serving table. I gave her several to take home for her kids.

These are really good. Much better than any other box mix. They taste homemade. Pick up some semi sweet chocolate chips from TJ's and throw some in the muffin mix. Delicious!

I have always had good luck with Dr Oetker's Organics, just do the well-known swaps like buttermilk instead of water, cooled brewed coffee instead of water in any chocolate or brownie mixes, melted butter instead of canola oil and/or add in dried fruit or almonds.
