However, I do a fair amount of substitutions/variations. Sometimes I use ground chicken instead of lamb, and I increase the meat and decrease the orzo a bit so it is a heartier main course. I also add a lot more tomato paste than here and I ramp up the spices a bit too. I also use 14.5 oz of canned tomatoes instead of fresh, which means you don't have to do the step where you remove the meat from the pan, you can just add the tomatoes. I also serve the asiago cheese on the side for people to add and I don't bother with the last step of baking it.
