I totally agree on the strata.
Egg salad sounds like an enormous pain in the ass.
If this were me, here is what it would look like:
-Steel cut oats in the crockpot-recipe here, I sub whole milk for cocount milk:

you can put this on the night before. Might only end up 12 servings or so, but that is fine, I'm sure not EVERYONE will want oats, but it is a healthy option for some. I'd put out a some nice toppings for people
-If there are kids involved, I'd have some frozen waffles handy.
-A few days in advance, I would make 3 dozen bananna nut muffins. In my experience, these hold very well in zip lock bags.
-A few pans of Strata and possibly baked french toast if you have double ovens.
-Bagels and Lox as you suggest (only Item that I would plan for one for each guest)
-I have an Anita's near my house and I would DEFINITLY roll over that and pick up a few dozen breakfast burritos. They are cheap and delicious!
