Agree with L'Academie de Cuisine. I have a friend who was a substitute teacher (he filled in for a regular teacher on occasion) including knife skills.

We did a one night knife skills class here just for fun. We both cook a good bit but were looking to get some tips to make prep. work go faster etc. We had a great time and learned a good chicken recipe and got some great tips on how to debone a chicken and take apart a whole chicken. The actual slicing and dicing lesson wasn't very helpful (e.g., we knew how to chop celery and did not get an great tips on how to tackle an onion to get nice even sized pieces without a mess). And while most of the equipment was great, the knives sucked. Which was odd for a knife class.

SO, I'd go for a recipe based class here anytime but would look elsewhere if knife skills are definitely what you want.

Is anyone aware of short cooking technique classes, ex. Advanced Knife Skills, around DC? Looking to give as a gift. Not looking for longer term classes that run over the span of weeks. Just interested in something that is a full day or less.
