Black bean corn salad. One can black beans (rinsed & drained); one bag frozen corn; one red bell pepper (diced small); 2 or 3 green onions, chopped (the whole thing, white & green); with a vinaigrette that's one part oil to 2.5 parts vinegar (I like apple cider vinegar). Mix solids in a bowl, add enough vinaigrette so you taste the tang of the vinegar, a little salt, a lot of black pepper.
Optional extra ingredients: fresh raw garlic (minced), fresh chopped cilantro.
