If it has potatoes and sausage, it's probably a pretty hearty soup, so I'd just serve it with some good, crusty bread. (I love soup and bread.)

Quiche. Buy a decent premade crust (Whole Foods and Trader Joes have butter-based ones that are really good), make sure to prebake it, and then just make the filling. You can do it ahead of time, although I prefer to do it the day of so the crust doesn't get soggy.

Since it is October - how about doing something a little more seasonal? Using fresh apples in a salad? A squash or pumpkin soup?

They are supposed to be in the soup (I have to check if I blend them or just cut in small pieces though). Do you serve the red peppers by itself or do you fill them with something?

It is just a relative and her daughter (plus our family of three). we have decided to meet for lunch once a month at each other's home, as a way to keep in touch. Otherwise, life gets in the way.

Anyway, last month I hosted, today she hosted and next month it will be my turn again - the thing is, I AM NOT gifted when it comes to cooking. She is and she is always trying something new and it is always delicious.
