Op here. Thank you everyone for the ideas. My mom keeps giving me squash from her garden and my family is getting tired of it. This may help spice things up.

I made "French fries", with it. I know it sounds gross, but they turned out great and we dipped them in ketchup. Dd loved them...anything she will eat is always a winner.

Peel and seed it. Cut it into 1/2" chunks. Toss with diced bacon and some onion. Spread on a cookie sheet and roast at 400 stirring a couple times until it is brown in spots. Try not to eat it all at once.

I roast, then add to an arugula salad with lentils (I buy the Trader Joe's precooked) and top with feta or goat cheese and a balsamic vinaigrette. Could eat this every day....

Broil a portobello with garlic and herbs, top with mashed butternut and wrap in a phyllo "purse" - bake till crispy and drizzle with reduced balsamic. Delicious!

Well, you have to roast it first for the best flavor - just cut it in half and deseed. Not need to peel it. But afterwards, you can puree into a pasta sauce with some butter, sage, cinnamon, salt and pepper. Add white beans to the pasta for some protein. Yummm.

You could do the same as above and use it for a pasta filling, or a spread on bread?
