not the OP but i appreciate hearing about the paper towel trick. i will try it.

what i had taken to doing was just buying the whole romaine hearts and chopping them up only as needed. they stay fresh much longer than the bagged salads, they're cheaper, and seem to taste better.

but then you lose the convenience of pre-washed pre-chopped salad.

I buy spinach in the plastic tub. It is great, even on the use by date.

Yep - I second PP. You want your lettuce to get some air and then to get rid of moisture. We buy lettuce in plastic boxes v. bags, but just add a paper towel on top to soak up any moisture - keeps greens fresh much past their sell-by date! The paper towel will get damp after 3-4 days - just throw it away and put in a dry one. I can make a big box of spinach last 12+ days with this method.

My aunt gave me an awesome tip once and we never have salad go bad. This works for the bag you just brought home as well as for the leftover salad from your meal (provided no dressing on it).

1. Open the bag and pour the salad into a tupperware container.
2. Place a paper towel over the top of the container and then put the lid on (so over the paper towel).
3. Place container upside down in fridge.

I don't know what it is about this trick but we NEVER have salad get slimy or go bad since we started employing this trick. Good luck!

I always check the sell by date and bring home the freshest greens I can find, but invariably they start to become slimy within a day or two. I've noticed this especially with spinach. Once one piece goes to slime it junks up everything in the bag and I end up throwing it away.
I guess I could return it to the store, but I'm wondering if I'm doing something wrong.
Nothing else in the frig is going bad so I don't think it's a refrigeration issue.
