A salad of grilled corn, good grape or cherry tomatoes, basil, shallots and a light vinaigrette. Maybe add some black beans or avocado if you're looking for something more hearty. If there are going to be lots of kids there I'd go with orzo and roasted or fresh veggies.
This is EXACTLY what I was going to say. I make mine with corn, good tomatoes, basil, red onion, olive oil, red wine vinegar, and lots of salt and pepper.
Me too. Except I don't do the tomatoes. I use corn, red bell pepper, black beans, green onions (the whole thing, white and green), garlic, and oil & cider vinegar. Lots of salt and pepper, yes. I also like to use copious amounts of cilantro, but not everyone feels this way. (Including, sadly, DW.)
