Pancake poster #1 here. Yes, also biscuits and pie crusts for me as well. We should form some kind of support group.

biscuits can go fuck themselves.
I am stealing this line. I've been on DCUM for an embarrassingly long time and this is one of best I've seen. Esp. as I'm going to use this line in contexts that have nothing to do with biscuits.

I'll one up you rice posters: MINUTE RICE. It's always watery and I have to boil some of the liquid off.
This would be the minute rice I'm serving along side my gourmet curries.
Frustrating!

I'm even Southern and biscuits can go fuck themselves. If the weather is not perfect temp and humidity wise and you knead even one time too many or use just a tbsp short of flour, your biscuits are a mess.

flaky whole fish. it's either undercooked and watery in the middle, or overcooked and rubbery, every. single. time.
I think God is telling me something, since this has been going on for years and transcends every cooking method (bake, pan fry, etc).

You guys, rice!? 1 cup rice + 2 cups water = 3 cups cooked rice. Nonstick pot, pat of butter, turn it to simmer when it boils, cover and let it go for 20 minutes.
Baking is mine. I can't bake for shit. No matter how good I coat a pan, my cakes stick. I get crumbs in my icing. My fruit pies look like crime scenes. Forget ANYTHING that involves a meringue or a candy thermometer or a "soft ball" stage.

For a long time, gravy. Even if it was from a mix, I would always forget about it for long enough that it would congeal or burn or something.

Pancakes. No idea why. I am a good to excellent cook otherwise. They're my white whale. Meanwhile DH who can barely boil water makes light, fluffy beauties. Vexatious!

Me too. Although I think it's not really Mt. Everest, more like Old Rag.

I love to bake, make great al dente pasta and sauces, make a killer quiche, but I don't like to touch raw meat (even though I'm not a vegetarian). Very little experience cooking meat. So there's that.

What food is considered doable, even simple, to others, that you can not seem to get right? Mine is white rice - I always burn it. Yours?
