Mediterranean salad. CHopped cucumbers, tomatoes, red onion, avocado, lemon vinegarette, feta.

Cheese tortellini, chicken sausage, strips of red pepper. I mix it all in a Tupperware with salt, pepper and olive oil and then when it's warm, dump in some baby spinach to wilt. Or you could do an Italian pasta salad (corkscrew pasta, olives, marinated veggies) and add some cooked chicken. Or just regular old sandwiches and a potato salad. My mom makes a great potato salad with red potatoes and the dressing is a mixture of sour cream and horseradish.

So tomorow we are going to see the Sound of Music Singalong at Wolf Trap and doing a picnic beforehand. Two couples, 4 kids ages 8 through 3. My husband and I are not really picnickers and I am wondering what to bring as a main course. He just wants to get Popeyes chicken, which, uh, would not be my first choice for sure. Any favorite recipes that are good for picnics?
