Rolls with provolone cheese so people can do meatball subs.

I am hosting a little dinner party for three families (6 adults, 6 kids) full of picky eaters and a few dietary restrictions. I was thinking of doing a pasta bar with meatballs and a couple of sauces (marinara, cheese, or alfredo). Maybe some toppings. Any great recipes or ideas for me?
