Experiment with a good mac and cheese recipe (start with a stove top one) and once you get good at making the roux you can mix it up with different cheeses, mix-ins, and baking vs. stove top.

Pair with a green salad or roasted veggies.

Done.

Buy a bag of frozen chicken breasts from Trader Joe's.

Get about 1 cup of some type of sauce.
Options:
- salsa
- bbq sauce (add extra brown sugar or honey or pepper)
- lemon juice, butter, olive oil, herbs
- dijon mustard soy sauce and apricot jelly (trust me)
- soy and ginger and sesame oil (just a little oil)

Preheat your oven to 425 degrees.

Slather the chicken in the sauce, on all sides in a baking dish. Pour the rest of the sauce on top.

Cook for 35 minutes. Flip it halfway.

Serve with rice/potatoes/fresh bread and a veggie/salad/fruit.

Done.

Fish tacos

Broil or bake tilapia or other white fish dusted with chili powder (ancho is great) 8-10 minutes
Flake into a warm flour tortilla
Mix sour cream wth chipotle in adobo (EASY ON THE CHIPOTLE) and add that
Add salsa
Add shredded cabbage (I mix the cabbage and chipotle sour cream into a slaw)

Walla!

Skinless Chicken Breasts -
- Sprinkle olive oil & Goya Adobo (the one with the red top, located in the Hispanic aislecook) on the chicken in a frying pan.
- Add 1/2 to 1 chopped yellow onion (fresh) - I buy it by the bag.
- Cook on medium heat on stove in a pan with a lid (covered) for about 20-25 minutes. Flip once midway.

Beans & Rice
- Cook jasmine rice for 25 minutes - I use 3 cups rice and 3 cups water, cover, bring to a boil, reduce heat to medium low, and let it simmer.
- Fry a big yellow onion for 10-15 minutes, then set aside. (If you want yellow rice, after 10-15 minutes, add a dallop of oil to the pan, sprinkle a TON of turmeric on the oil, and stir it all up. Let it cook 5 additional minutes, then set aside).
- Heat Bush's Chili Beans with the juice from the can - Medium or Mild - (it's mexican tasting, but located next to the vegetarian baked beans at the store, not the regular bean aisle or area) on a pan for 10 minutes. Sprinkle some Adobo on it too.
- Mix the rice, beans, and onion.
- Voila!

Go buy How to Cook Everything by Mark Bittman. I own a lot of cookbooks and use that one by far the most.
