I use an olive oil mister and basically roast almost everything with salt, pepper and sometimes garlic and onion. With the mister, I use much less oil that i would from the bottle.

I love to roast a big pan of veggies (cauliflower/brussels sprouts/red pepper/potato/carrot/broccoli/garlic cloves/beets/etc...) and toss with a vinaigrette. I do about 1/4 cup + canola oil to roast and add about 1/4 cup of the vinaigerette after they're out of the oven. A bunch of frozen peas at the end of the cooking time adds a lot of sweetness. Delish with almost any meat, mac and cheese, or even pizza!

I love this recipe. I've served it at parties before and it's been very popular. Serve with your favorite grain. If you want it to be more filling, you add more potatoes which are the most filling part of the vegies (that is, if potatoes are still considered vegies after the asparagus thread):

No blog, but you can sautee onion & garlic & add pretty much any veg to get a flavorful dish.

Looking for some low cal veggie recipes for dinners. Do you have any blogs, cookbooks, etc that you rely on for these types of recipes? I am not a vegetarian but I am trying to pull back on meat...especially at dinner time. Thanks!
