I am hosting a lunch on Sunday, and am trying to do some tasks ahead of time so that I can sleep in a bit 
On the menu is a shredded carrot salad. Will the carrots keep well if I scrape and shred them on Friday and store in a ziploc bag? I plan to dress them only 10-15 minutes before serving.
Any other storage tips? Thanks in advance.
