I freeze costco mozzarella all the time. When you defrost it, use on pizza or in pasta and you won't be able to tell the difference (after being frozen for 1-2 months).

I think you can freeze it, well wrapped, for up to six months. Thaw in the refrigerator overnight, not in the microwave. The texture will change a bit, become more crumbly, so you could use it in a lasagna or something.

Hard cheeses yes. not sure about soft cheeses like mozz

I freeze shredded cheese. I don't know if I have ever tried freezing, say, a block of cheese.

I was a little overambitious on buying a costco-sized thing of mozz balls...

Can you freeze cheese? It's good, but there's no way we'll be able to use it before the expiration date?
