1. Grill it as a side. Use the leftovers on sandwiches like you would a tomato

3. Cut it up in small pieces and mix with corn, red onion and red pepper - toss with a Vinaigrette.

4. Make Zucchinni Lasagna (http://www.skinnytaste.com/2009/02/zucchini-lasagna.html)

5. Cut and dip just like a cucumber - ranch, tzatziki or hummus.

I use squash in a fresh tomato sauce. I cook it with onions, garlic, and tomatoes. Serve over pasta with smoked mozzarella.

I just made a "quiche" with an oversized squash a neighbor gave me. Shredded it, sauteed with some onion and garlic and then mixed into 2 eggs, 1 c. milk and 1/2 c. cheese (oh and fresh basil). Baked in a pie crust. Delicious as leftovers for lunch.

I julienne the squash and salt it to make it go limp. Sauté mushrooms and garlic in lots of butter, add wrung out squash and sauté a bit. Lots of parmesan and you are good to go.

Try the cookbook Alice Waters Vegetables. Lots of ideas for CSA veggies.

I made fried rice with my CSA squash last night - chopped the squash into smallish pieces and stir fried it, took it out and added the cooked (cold) rice, made a well in the center and cooked eggs, then stir all together and added squash and a soy sauce/vinegar/garlic/sugar sauce. Good!

Our CSA is delivering loads of squash these days. Anyone got some new and interesting ideas on how to prepare it? I know and do all the basics, so looking for some fresh ideas!
