We're heading to the beach soon with extended family. We've learned over the years that we want simple, cold options for lunch. Most of the family is fine with sandwiches everyday, but we don't really eat lunch meat or sandwiches. So, I try to cook a few things before we go and then replenish part way through the week. Here are my usual "go to" options:

Tomato, mozzarella and basil salad
Corn, black bean, and tomato salad
Cheese tortellini with chopped peppers, green onion, balsamic vinegar and oil
Orzo with pine nuts, spinach, feta and Greek dressing
Hummus with pita and sliced veggies
Pasta with pesto and tomatoes

Any other suggestions for lunches I can make in advance (a day or 2 is best, but even that morning will work)? I feel like I make there same foods all the time in the summer and would love to branch out. (we also have dinner at the pool a few nights a week in the summer and these are my standard options as well.). Also, we do eat chicken and seafood, but I try to limit it at lunch at the beach since our family will have it every night and we try to eat vegetarian at least half the time.
