you should also temper the chocolate when you melt it so that you dont get the discoloration that comes from untempered chocolate. You can google that.

ITA - you can totally remelt it.

However, I'd recommend using a very small amount of vegetable oil or shortening to thin the chocolate. Something along the lines of 1-2 tsp per cup of chocolate.

Yes, you can remelt the chocolate.

If you want to thin it, add a little milk or cream--but is it the right texture when solid? If it is, don't think it more. But you can heat it a little more to thin it more.

I am making cake pops and need to dip the cake pop ball into melted chocolate.
I tried just 1 tonight - and am wondering:
-Can I re-melt the chocolate which I already melted and is now completely solid?
-Is it possible to "thin" the melted chocolate?
It seemed so thick!
